Abstract

The moisture content of salted red snapper(Lutjanus ssp.) is in the range of 58-60%.Drying the fish for 31h at -500C and 600C using mechanical dryer will reduce the moisture to between 33-40%.The recovery rate is between 62-70%. and usually dependent on the final moisture content of the product. Salted dried fish produced using mechanical dryer is more preferred as it is cleaner and relatively free from contamination. The drying cost is about M$1.20 per kilogram dried product.
